This chocolate roll with soft cottage cheese and banana filling is made without flour or sugar. Banana pieces and honey give the pastry sweetness and an appetizing aroma. The base for this roll is a sponge cake, which is made with cornstarch instead of flour. Cocoa powder is added for chocolate flavor, and baking powder is added to keep it fluffy. This flourless and sugar-free chocolate roll is soft and very delicate. It will appeal to those who watch their figure, as well as all other sweet tooths.

Step-by-step recipe
- Prepare the necessary ingredients.
- Separate the egg yolks from the whites. You will need four egg whites and two yolks for the roll.
- Turn on the oven and preheat it to 180 degrees Celsius.
- Beat the egg whites with a mixer until stiff peaks form.
- One at a time, without stopping beating the egg mixture, add the yolks to the whites.
- Beat the whites and yolks for about three minutes, until smooth.
- Combine the starch, cocoa, and baking powder.
- Mix until smooth. For a softer and fluffier roll, the mixture can be sifted.
- Add the cocoa with starch and baking powder to the beaten eggs.
- Gently fold everything together with a wooden spatula, using a bottom-up motion. Mix gently, but try to make the dough smooth and lump-free.
- Line a baking sheet with parchment paper. Grease the parchment paper well with butter. Spread the dough on the parchment paper in a layer about 1 cm thick and smooth it out.
- Place the baking sheet in a preheated oven for 15 minutes.
Remove the finished cake from the oven. - While the cake is still hot, remove the parchment paper.
- Place the cake upside down and let it cool completely.
- Peel and slice the banana into small pieces.
- Combine the cottage cheese, banana, and honey.
- Mix until smooth.
- Spread the cottage cheese and banana mixture onto the cake.
- Carefully roll the cake into a roll, as it is fragile and may crack slightly.
- Place the finished chocolate roll with cottage cheese and bananas in the refrigerator for 1-2 hours, then serve. If desired, you can decorate the roll with coconut flakes or powdered sugar.
Bon appetit!
