This Hamburger Soup makes a great quick and easy dinner to throw together after a long day of work, school, sports, practices, and everything else life throws at us. It’s also great when you’re just not sure what to make for dinner and need something everyone will eat.
You only need about ten minutes to get everything together and another ten to get everything cooked. That gives you time to get your clothes changed, get homework started, throw a load of laundry or dishes in, or just sit down and take a breath for a few minutes while you’re making dinner.
Personally I like dinners like this hamburger soup because it’s something that I can throw together and not have to stand over it and babysit it. Sure sometimes I’ve got the time to stand in the kitchen for 30 minutes and make dinner (let’s be real – we really don’t but we make the time), but most days it’s just not a luxury I’ve got.
I also like recipes like this because you can tailor it to fit your family’s tastes. A bag of frozen mixed veggies is in the recipe but use what your family likes. This is also a great recipe to sneak in those veggies kids might not like but might not try otherwise.
So what do you need to make this hamburger soup? It’s a lot of things you’ve probably already got on hand:
- 1 lb hamburger (93/7 is recommended but use whatever works for you)
- 1/2 cup frozen mixed vegetables (again, use what your family likes)
- 2 red skinned potatoes; diced
- 2 tomatoes; diced
- 32 oz beef broth
- 2 bay leaves
- 1 tablespoon minced garlic
- 3/4 cup yellow onion; diced
- 1 tablespoon olive oil
- 2 teaspoons salt
- 2 teaspoons pepper
Once you get everything together, it’s time to get to cooking. You’ll need to spend a few minutes to get everything started, but then you’ll be able to walk away and let everything cook.

Set instant pot to saute mode. Add in olive oil with onions and garlic and saute for about 1 minute.
Add in ground beef and cook until browned.
Add in salt, pepper, potatoes, and tomatoes. Stir well to mix everything together.
Turn off saute mode. Pour in beef broth and bay leaves. Here’s where you get to walk away!
Place the lid on your Instant Pot and set to sealed position. Click pressure cook or manual button and set the timer to 8 minutes. Once the instant pot stops counting and beeps, release the pressure.
The pot will move to keep warm. This is when you’ll add in vegetables. Mix them in with everything else and wait a couple of minutes for them to warm up. Once the veggies are warm, it’s ready to eat!
You could top this with “regular” hamburger toppings like some crunchy bacon pieces or shredded cheese. Since this is a soup with a lot of liquid, you could also serve it with crackers or cornbread.
Instant Pot Hamburger Soup
This quick and easy Hamburger Soup will quickly become a favorite.
Ingredients
